Potato balls make great and simple appetizers, a perfect treat for a dinner party or a lunchbox snack. These small-sized balls are easy to handle and are warm, crispy, and bacon flavored. They can also be dunk in ketchup for a tastier treat.
- Makes: About 20 small balls
Ingredients
- 2 cups cold mashed potatoes
- 1 egg, lightly beaten
- ¾ cup shredded cheddar cheese
- ½ cup chopped green onions
- ¼ cup bacon bits
- ½ cup dry bread crumbs
- Oil for frying

1Place the oil in a large pot and have it preheat to 375° Fahrenheit (190° Celsius).

2Place the mashed potatoes in a large bowl and have it sit for about 30 minutes in room temperature.Advertisement

3Fold in the cheese, onions, egg, and bacon with a wooden spoon. Mix.

4Roll the mixture into balls. Grab a tablespoon of the mashed potatoes and use your hands to roll them into small balls. Place the potato balls on a dish.

5Roll the balls with breadcrumbs. Put the breadcrumbs on a plate and roll the balls on the plate to coat them with breadcrumbs.
