Are you looking for a French delicacy for a special event? Try these stick-like wafers. A crispy outside surrounds a sweet filling, so it's great for everyone.
Ingredients
Yield: 3 dozen wafers
"Wrapper"
- 2 cups confectioners sugar
- 1 1/4 cup all-purpose flour
- 1/8 tsp. salt
- 5/8 cup melted unsalted butter
- 6 egg whites
- 1 Tbsp heavy cream
- 1 tsp vanilla extract
Inner Filling
- 1 1/2 tsp corn syrup
- 4 oz chopped bittersweet chocolate (chips)
- 1/4 cup butter
Steps

1Preheat your oven to 425 °F (218 °C) and grease 2 baking sheets.

2Mix together all the ingredients, until they are all well blended together.Advertisement

3Cover the mixture and refrigerate for 2 or more hours.

4Spoon about a tablespoon worth of dough onto one baking sheet. Spread them out until they are in the shape of an oval and are approximately 6" by 3". You should be able to fit only about 4 "cookie-wafers" on each baking sheet.

5Bake the wafers for 6 minutes.

6Prepare the inner filling, mixing all those ingredients together.

7Remove the wafers from the baking sheet, and place them on a clean surface.

8Drop some of the filling onto the wafer, and make sure to spread the filling until the filling not quite reaches the edges of the wafer.

9Use a chopstick to roll the wafer&filling pieces up. DO not let them cool, so work quickly, otherwise they'll be too stiff to roll and hard to fix. The filling will become burnt, if you leave them on to bake a few moments longer, and it's a pain to have to rework the chocolate into the cookie again.
