Pineapple butter makes a delicious filling for cake, or it is a nice spread on toast, cake, muffins, or scones for Sunday brunches. It can also be used as a dessert accompaniment as a sauce for such dishes as ice cream, cheesecake, or pie.
Ingredients
- 450g / 1 lb pineapple, diced
- 225g / 8 oz apple, diced
- 2 tbsp lemon juice, freshly squeezed
- 150ml / 1/4 pint water
- Sugar - 350g / 12 oz to every 450g / 1 lb Purée

1Put the pineapple pieces, apple pieces, lemon juice and water into a saucepan.

2Place the lid on the pan and cook gently for 30-40 minutes. Stir frequently using a wooden spoon. The mixture is ready when the fruit has softened.Advertisement

4Pour the purée into the pan and add the sugar. The amount of sugar should be adjusted as explained above. Cook over gentle heat, stirring frequently. Keep cooking until the sugar dissolves.

5Bring the mixture to the boil. Cook for about another 15 - 20 minutes while stirring occasionally. You are aiming for a thick and creamy texture.

6Remove from the heat and stand for 5 - 10 minutes to cool slightly.

7Pour the mixture into jars. Cover each jar with a wax paper circle and cellophane. Fasten with a rubber band or elastic.
