Community Q&A

  • Question
Is there any danger in using eggs when preparing Irish cream?
    Community Answer
    Community Answer
Using good, fresh eggs should not cause any problems, as you keep this recipe in the fridge when not in use. My mum has made this for many years, she told me that when blended with the cream they are not eggs anymore, and the alcohol will act to preserve.
  • Question
What do the eggs do in this recipe?
    Community Answer
    Community Answer
Cream and whisky don't easily mix. Adding the egg works as an emulsifier and helps to prevent the mixture from curdling.
  • Question
    Why did the mixture curdle?
    Community Answer
    Community Answer
Dairy products can curdle when in contact with acidic ingredients like whiskey. This is fairly unlikely with fresh, high-fat milk products. Heavy cream is almost foolproof, but you should be able to use half-and-half if you pour it and mix it slowly.

Warnings

  • Pasteurized eggs or egg whites may be bought by the carton and are safe to consume without cooking.

  • The real Baileys is manufactured with no egg tracing. It is optional to use eggs in this recipe; however, some websites that offer a homemade version of Baileys have included eggs as an ingredient. If you're concerned about adding eggs, simply don't. Add another 1/2 cup of whiskey.
